Ipeka is a pioneer in Sourdough manufacturing automation, we have worked jointly with Finnish bakeries to develop process equipment for over 30 years. We have also been involved in research projects with universities and have delivered special-made containers for labs and educational purposes.
The Sourmatic has always been designed according to customer needs. It can include automatic flour and water dosing and the starter sour dough storing and restoring. In the production of sour dough it is important to be cooled efficiently in order for the fermentation to stop at the correct stage and for the mixture to remain homogeneous. Cooling, mixing and dispensing a variety of options are available as suitable for each process.
